What's for Dinner, Tues., Oct. 14, 2014

I am headed to the Portuguese restaurant for ? with the RG, who has landed from Paris. Will this be lunch? Or will it be dinner? We will be dining at 3:30 p.m. EST.

I plan on having chicken francaise with shrimp. Big salad with balsamic, artichoke hearts, tomato, cucumber, and black olives.

1/2 chicken broth, 1/2 vegetable broth.

new potatoes
carrots
red bell pepper
green beans
whole corn
zucchini
onion
celery
garlic
some greens

A mix of spices.

I'll do a quick marinade in balsamic and garlic. Some steamed broccoli, and maybe some rice. While the grill is on, I'll roast some Mexican squash and tomatoes, brushing with the leftover marinade.

one package (3 breasts) boiled chicken breasts sliced into medallions lining the bottom of the dish, with broccoli (1 bag frozen) and cauliflower (1 bag frozen) over those, covered with condensed cream of chicken soup (2 small cans), then shredded cheddar cheese (1 8oz bag), baked for an hour at 350, the first half covered with aluminum foil, the second half uncovered. Makes 6 servings if it's the entire meal, 8 if you do a side or two with it.

I used tomatoes, corn, and onion from the farmers market. Salsa verde, chicken broth, cumin. Lots of sliced avocado to top, along with fried tortilla strips and sour cream.

Apple crisp for dessert, using several different varieties of apple that I've collected over the past few weeks at the market.

I made a roast chicken with potatoes and braised carrots. My daughter made an okra cornbread which was delish.
