What's for Dinner, Fri., Aug. 8, 2014

I'm going to roast this cauliflower using the Trader Joe recipe. I've been wanting to do this for a couple days but have been busy nights, so no time to cook.

What you do is steam the cauliflower for awhile and then spread a mixture over it and bake it 25". The mixture is parmesan, mayo, and mustard. It was so delicious when I tried it at the store.

I would like to get some turkey sausages to go with, but only if someone else goes to the store. I was out shopping all morning and am not going back!

New guests arriving tomorrow. Will take them shopping on the way from the train.

Caprese as our antipasto, then a simple pasta with truffles for the primo.

I bought some excellent porchetta today that I will re-warm for secondo.

Finally, a simple berry tart with marscapone for dessert.

I think they will be pleased.

I think I put some breadcrumbs on just before baking, but I am not sure.

Some sausage would be great with this.

I'm excited - I've been without parmigiana cheese for about a year, it's not in my $2 a day budget. So I make eggplant parm, but just with the mozzarella. Last night it hit me - I have a big jar of nutritional yeast in the fridge from last time my vegan kid visited. I'm so in the habit of just using it on kale chips, I forgot all about using it in other recipes.

I bought tomatoes in a marked down produce deal today, a big bag of them for 99 cents. Then they came with me on the rest of my 20 mile bike ride, so the sauce is half made already. Oops.

I have a lot of beautiful locally grown tomatoes right now and I think I am going to make a sauce from them.

Parmesan is super cheap here and I am putting it on everything. Can't get enough.

I was coming off the Mario Batala recipe for this, and was thinking why can't I spell this?! American spelling. You'd think I'd be better at my native (and only) tongue!

Making bread and butter pickles tonight and don't feel like anything else.

Big cooking weekend. Family picnic on the riverside lawn Sunday, with croquet and bocce ball, wading for anyone who wants to do so, Bananagram, exploring the park nearby, picking blackberries.

On the casual menu:

Chicken salad (w/ cashews and dried cherries) sandwiches on croissants
Salami/provolone/red onion/greens on Italian rolls with oil & vinegar
Ham & swiss on rye w/mustardy slaw tucked inside

Pasta salad w/lots of fresh basil, garden veggies, black olives, vinaigrette
Assorted pickles

Martha Stewart's Iced Lemon Mousse (I love that recipe)
Fresh brown sugar peach pie
Fresh Gravenstein apple pie, first of the season
Coconut cream pie
Watermelon

Iced tea, iced coffee

Gahd, I just realized how much I have to do!

Aka breakfast for dinner. (We're notoriously bad about eating breakfast for breakfast. The housemate just doesn't do it, and if I do have more than coffee, it's likely to be something like nuking a jalapeno mettwurst, or just hacking off a piece of white cheddar to munch on.)
