I had a very good culinary Christmas. I got a couple of kitchen gadgets, some interesting spices, a nice pizza stone, and a wine kit (Primitivo). I've been trying out different things but this is what I've played with the most:
I was never quite sure if a crepe maker was worth it since I've made them fine for years with a fry pan. I'm convinced of it's worth now. It's always the perfect temp, I can make nice big crepes and it's very easy the flip. The spreader is helpful too. Of course the first crepes I made were just crepes and Nutella.
Tonight I made a crepe with cheese, vegetarian ham, and egg. Here is the recipe:
Crepe batter
1 cup flour
1 cup skim milk
1/2 teaspoon salt
3 eggs
2 TBSP melted butter
Mix together ingredients and stick it in the fridge for at least half an hour before using. I keep the batter for up to 3 days in the fridge.
Filling (this part is per crepe)
1 egg
1 1/2 to 2 slices of Havarti
3 slices vegetarian ham
Heat up crepe maker. Break an egg into a bowl and beat it briefly with a fork. Pour half a cup of crepe batter onto the crepe maker and spread it evenly. Flip the crepe. As soon as you flip the crepe spread the egg over the crepe. Once the egg sets place cheese and ham on one half of crepe. Wait 30 seconds. Fold crepe twice, so it is a quarter the size, and serve.

Crepes are super yummy and so versatile.

(20,234 posts)my favorite sweet ones were a cheesecake-like filling (cream cheese, egg, vanilla and sweetener) with berry sauce over the top.
my favorite savory ones were from when I had leftover turkey - turkey, white sauce, and loads of mushrooms. mmmmmmmm.

I like cream cheese and marmalade in crepes.
Also sauted mushrooms, onions and peppers for a veggie dish.
Your havarti ham and egg sounds delish...

(4,074 posts)I used to make one with mushrooms, onions, and peppers. Then topped with feta and balsamic reduction.

One restaurant where I worked did a Sunday Brunch French toast with two brioche (cooked in butter, of course) slices filled with mascarpone, stewed apples and raisins and maple syrup. That might be a great crepe filling, too.

(11,360 posts)... you're making me hungry. I like fruit crepes, and they're easy to make: you cut up about half your fruit, and cut up and cook the other half with a little sugar, butter and lemon juice. Once it's hot you can thicken it with a bit of cornstarch or potato starch (mixed in cold water). Put some cooked fruit and some raw on each crepe, and roll them up.
I make crepes in a cast iron pan. The gadget looks cool, but I think I already have too many gadgets.
