What's for Dinner ~ Wednesday Oct 24th
King Ranch casserole is in the oven now. Can't wait! (chicken, rotel, corn torillas, creamy chicken soup base, cheddar) Way better than it sounds!

1. Orecchietti with caramalized onions (lots of them) and blue cheese, roasted cauliflower, an escarole

Your dinner sounds great....I'm always up for Mexican food  . I have a Pace cookbook from the late 1980's....there is a King Ranch casserole recipe in there that I've made (without meat).  |

I like the rotel flavor and heat and the browned cheese! The chicken is incidental
