What's for Dinner ~ Wednesday Oct 24th

King Ranch casserole is in the oven now. Can't wait! (chicken, rotel, corn torillas, creamy chicken soup base, cheddar) Way better than it sounds!

1. Orecchietti with caramalized onions (lots of them) and blue cheese, roasted cauliflower, an escarole

salad.

Your dinner sounds great....I'm always up for Mexican food . I have a Pace cookbook from the late 1980's....there is a King Ranch casserole recipe in there that I've made (without meat).

10. I could easily sub beans for the chicken and be just as happy

I like the rotel flavor and heat and the browned cheese! The chicken is incidental

2. Oh, that looks so, so good!

Leftovers tonight.

My guests have just left and we have a few more things to clear out of the fridge.

11. That is most unfortunate, Lucinda.

There are some meds that can do that. Hope you get it sorted out.

12. I had a leftover tuna steak that I pan seared the other night

I made a nice sauce for it which I used on the pizza. It turned out great!

5. chicken with lemon-tarragon cream sauce, mashers with sour cream and a dab...

...of horseradish, simple sauteed fresh spinach.

And some applesauce from the freezer. I shouldn't start using the summer's crop yet, but it just sounds really good.

6. It does sound good!

I was thinking about crock-potting some applesauce earlier today. Tis the season!
