Your dinner sounds great....I'm always up for Mexican food . I have a Pace cookbook from the late 1980's....there is a King Ranch casserole recipe in there that I've made (without meat).

Even with the Rotel in it. Bill said it was a good batch though.

...of horseradish, simple sauteed fresh spinach.

And some applesauce from the freezer. I shouldn't start using the summer's crop yet, but it just sounds really good.
