Cole Porter Albacore

I used to make this with shark, which is no longer available for good reason, but albacore fits the bill. The name reflects the basics, cole crops, port wine and albacore.

Broccoli florets
Cauliflower florets
Brussels sprouts
(these should be same sized to cook evenly)
Water chestnuts

Albacore, cut into good size cubes, peppered

Olive oil
Port wine
Soy sauce

Ground ginger
Mayonnaise
Lemon
Salt
Pepper

Steam / par boil the veggies till just about done, drain, set aside.

Brown (hot) the albacore quickly, turning in a little oil, port wine and soy sauce.

Combine all back together, turn all and cook low till just done.

Blend mayo, ginger, lemon, salt and pepper to taste. (I've found this dressing to be really versatile for additions. Turmeric, cinnamon, five spice, etc.)

Plate with some cut fruit side.
