are buttermilk pancakes wrapped around a sausage link, with some butter and the syrup of one's choice. That looks like a cabbage leaf wrapped around something, with an unknown sauce (perhaps with paprika) over it. Don't get me wrong - I'd probably love it - I just don't know what I'm looking at.

Like you said, cabbage leaves wrapped around rice, ground meat, some spices and tomatoes with a tomato sauce. Mr gut grew up on the stuff and he loves it.

though my family is Italian and we've never called it Holopchi. So either the Italians borrowed it from the Ukranians or the Polish people did and my grandmother was influenced from the large polish community in her neighborhood.

You make your own pita, truffles, and biscotti? Pita I think I could handle. I don't have a clue about the other two (particularly the truffles - all things candy are terra incognito to me), but love to eat them. I admire people who can do things that are a mystery to me.

The truffles are actually the easiest to make, they're just really messy This past year I made them again for Xmas, and I bought a new tool: a #100 scoop. It's the perfect size to scoop the ganache, so that they all come out almost the same size and roll in the hand easily (you have to roll the firm ganache into an even ball before dipping.)

The biscotti is the most time-consuming because there are many steps. The pita is easy, too, and not nearly as messy as the truffles, but will take at least three hours, start to finish. The baking portion is a constant bit of work due to the fact that the pitas only stay in the oven for a few minutes. I have a kiln shelf on the bottom rack of my oven, and I preheat it to the highest temp the oven will go (550F I think) and bake on it. Slide them on with a pizza peel, and pull them out 3-5 minutes later
