Though she hadn't spent any time around them, she could scarcely care less, looking right through them if there was a dog standing beyond.

She and I were within a couple hundred feet of an elk herd in Estes Park, CO--with a couple walking towards us-- Oblivious, but became intent when she spied a dog about a block away...LOL

My SIL has a scotty dog and when she takes him for a ride in her car he goes out of his mind when he see horses. We all have to cover our heads coz he jumps around the car squealing and whining. It's hilarious.

We've driven by cows--no response. Just the "horsies" gets him all worked up.

Keep her on a leash outside; horses don't really appreciate it much.

I've seen enough excited dogs stomped or kicked by an irritated or defensive horse, and had a horse explode underneath me a few times when a dog started barking wildly at us.

My dog does the opposite. At home, she only gets excited about horses when she thinks we're going for a ride. Horses, chickens, etc.? She's a great ranch dog. She doesn't bother them, or get bothered by them, at all.

Take her for a ride into town, though, and she's barking hysterically at every person walking or riding a bike down the street. She gets overstimulated trying to figure out what her job is: herd the chaos, or stay close and chase it all off.
