Adding fresh English peas to what is an otherwise fairly traditional guacamole is one of those radical moves that is also completely obvious after you taste it. The peas add intense sweetness and a chunky texture to the dip, making it more substantial on the chip. They also intensify the color of the green avocado — and help the guacamole stay that way. Pea guacamole keeps its bright hue in the fridge for a few days without turning brown around the edges. A good dose of lime juice helps this cause. This dish, a collaboration between ABC Cocina’s chef-owner, Jean-Georges Vongerichten, and his chef de cuisine, Ian Coogan, is the best kind of greenmarket tweak upon a classic.

What could a guy named Jean-Georges Vongerichten know about making an authentic Mexican guacamole? If his Green Pea Guacamole sits in the fridge "for a few days", you know he's done it wrong. I can buy a pound of fresh guacamole at our big, local Mexican supermarket where the girls in the takeout section are making it up on the spot. I grab a package of warm, handmade tortillas and a big bag of fresh corn chips and head home to grill some fajitas or quesadillas. Then me and the mister scarf up all that delicious guacamole. It's usually gone before bedtime, but occasionally there a bit left to top a couple of breakfast burritos... no peas to be found, ever.

...some salt and lime juice. Toast up some flour tortillas to make chips, or use tongs to toast corn tortillas in the flame of your gas stove. Enjoy!

tomatoes, seeded and chopped
red onion, chopped finely
A LOT of cilantro, chopped
fresh lime juice
salt

Mush and mix. Voila.

Its really cheap in California so I buy 3-4 big bunches for $1 every week. Right now I have a some sprigs floating in a big jug of spiced sun tea.

Neighborhood guac. Avos fall off the tree onto the ground. Give a few of the strays a new home - mashed up in a nice big bowl with chips or even crackers!

If you really wanna go extra sinful - add a couple of tablespoons of mayo. Or not. Lawry's seasoning salt will help, too instead of plain ol' salt.

that is the traditional recipe, except we use lime, not lemon. Spice is added to taste with salsas on the side, or for the adventurous, with the dried seeds from a bowl on the table. Those are not for the faint of heart.
