What's for dinner tonight?
I'm doing a big pan of roast veggies with a small pork roast for Bill on top. I looove roast veggies. Inexpensive and delicious. :)

1. Cheese fondue!
My favorite meal for guests. I picked up the cheese while we were on the mainland. Step daughter and boyfriend visiting. I have the bread, apples and cheese.

I just love this slow, shared meal with a nice bottle of wine and great conversation.

Can't wait.

It seems so unfair that there are foods that we can't eat any longer.

It was really good, tho. Tossed some marinated artichoke hearts and a few capers into my bowl. :9

7. teriyaki chicken thighs, yakisoba noodles, edamame beans
...with some bean sprouts and ginger. I love bean sprouts. Trying to eat healthy tonight. Skinless chicken thighs. I poach them first to cook off the fat, drain and then drizzle teriyaki over and let it caramelize a bit.

10. Beef stir fried with mushrooms, carrots, fresh pineapple, onions.
Made the sauce with some organic coconut milk, orange juice, and a little sesame paste, plus ginger and garlic, of course. Turned out really nice.

16. For Thursday Nights adventure in world cuisine.

I am recreating most of Tina Nordstrom's Swedish Meatball dinner from the episode of New Scandinavian Cooking that aired on the PBS Create channel last sunday.

I already cooked most of it this morning, so I can do a quick finish. Made the meatballs per her recipe, a little cream gravy with the fond from the pan, threw some sour cream and dill into it. Just have to reheat that. I have potatoes ready to boil and mash, plus some peas. I would have done her cooked carrots with parsley, but I'm the only one in my household big on cooked carrots. All to be served with some cranberry sauce (sadly, out of the Ocean Spray can). And, I made the best loaf of whole wheat Tuesday night, and I still have about half of that to slice up and serve.

I'm already hungry thinking about it, and it's only 10:17 in the morning.

Comfort food on a cold, snowy Michigan night. Something nice to look forward to after the drive home from work, and after I go out and take care of the birds and gather today's eggs.

The only problem with it -- I put too much milk into my bread/egg/milk mixture. So, the meatballs were very soft, and they flattened out as they cooked, instead of keeping a nice round shape.

But, they taste great. I would definitely make this again. Very much old fashioned comfort food.

23. to my surprise, that show is apparently on Oregon Public Broadcasting...
on the weekends. I had never heard of it. I couldn't find a recipe for the meatballs, though, online. Are they made with veal? Do tell.

24. Yum! I had rice without the pork...but it is what I intended!
I made rice so we could do pork fried rice when Bill got home tonight. But I ended up eating a bowl with hoisin and he made breakfast. Tomorrow for sure though!

19. Baked salmon, baked sweet potatoes, and steamed
brocolli with a french roll on the side. I may toss a pear & goat cheese salad together and shower it with toasted walnuts if I can get up the ambition and drive. We are taking it easy after the holidays. Your roast veggies sound really good. I did roasted butternut squash and carmelized apple soup with curried chicken salad on Monday and that fabulous Thai Chicken noodle soup that someone posted here last spring. Doing research on soups this week, but ready for a no frills, sit-down meal tonight! :hi:

28. Recipe appeared in "Self" magazine in 2008
and was posted in C&B some time since. It is a winner in every way and I make it often. I usually add lemongrass when making the broth; yesterday I made the chicken broth from 4 chicken thighs and used the meat from that instead of using breast meat. Instead of spinach I will use what I happen to have on hand-sometimes collard greens, sometimes green beans or sliced bok choy. Yesterday I made it with cremini mushrooms, but I have also made it with plain white button mushrooms to no ill effect whatsoever. Everyone loves this soup! Enjoy. :hi:


Thai Chicken-Coconut Soup

4 ounces cellophane noodles
6 cups low-sodium chicken broth
1–2 red Thai (or jalapeño) peppers, seeded and finely chopped (plus slices for garnish)
3 cloves garlic, chopped
1 tablespoon grated ginger
2 teaspoons grated lemon zest
1 teaspoon grated lime zest
1/4 cup fresh lemon (or lime) juice
4 tablespoons Thai fish sauce, divided
1/2 pound shiitake mushrooms, sliced (3 cups)
2 boneless, skinless chicken breasts (about 5 ounces each), cut into 2 1/2-inch-long by 1/4-inch-wide strips
1 cup light coconut milk
2 cups baby spinach
2 tablespoon chopped cilantro (plus sprigs for garnish)

Preparation
Place noodles in a bowl; add enough warm water to cover and let sit until soft, about 15 minutes. Drain. Combine broth, pepper, garlic, ginger, lemon zest, lime zest, lemon juice and 3 tablespoon fish sauce in a medium saucepan. Season with salt. Bring to a simmer, add noodles and cook 3 minutes more. Using tongs, transfer noodles to a bowl and cover with foil to keep warm. Add mushrooms to broth; season with salt, if desired; simmer 3 minutes more. Add chicken and coconut milk and simmer, stirring, until chicken is just cooked, about 3 minutes. Stir in spinach until it begins to wilt, about 1 minute. Add chopped cilantro and season with remaining 1 tablespoon fish sauce. Using tongs, divide noodles among 4 bowls. Ladle soup into bowls and garnish with sprigs of cilantro and slices of pepper.

Just had my first bowl!! And shared the rest with my neighbor who called me on the phone about 10 minutes later to express the same sentiment!!

Never cooked with cellophane noodles before... they're a little weird I think. Gelatinous is the word that comes to mind. But the flavors are just wonderful. Thanks so much for sharing the recipe!! :hi:

46. I identify completely. When you find a dish as good as
this one you need to share it right away! The cellophane noodles are a bit strange, but they do adopt whatever sauce you put on them. I have also made this soup with Chinese egg noodles and Thai rice noodles all to good effect. 29. I just improv-ed that soup as I went along.
I had some good chicken stock on hand and used that plus some apple-cranberry sparkling cider (that I bought for my Christmas party and never opened) to thin out the butternut-apple puree and sparked it with a dose of apple cider vinegar. I also added 1/2 cup coconut milk that I had leftover from another dish. I like a creamy, pureed soup but am lactose intolerant (with thyroid issues so I can't use soy) and coconut milk is a nice subtly-flavored enricher. Soup is never wrong, is it? That sounds like a perfect end-of-week dinner! It snowed here all day and I made Salisbury steak with mushroom sauce, mashed potatoes and a huge salad to use up all my now-or-never veggies. I dressed the salad with lemon juice and EVOO and plated the whole magilla with a dinner roll. We both ate too much! Have a wonderful weekend! :loveya:

41. The snow is still piled up 2" deep on every branch of the
6-story tall oak tree outside my window. No wind last night, not even a breeze, and so all the trees I can see up and down the street look post-card perfect in winter wonderland mode. The Salisbury steak was very satisfying and I slept deeply last night with the windows open. (I changed sides with Mr. Pup since he is more sensitive to cooler temps than I) Take care of yourself, sis! :hug:

53. yeah, but my kid doesn't always enjoy the "presentation"


:rofl: To be fair, he's a lot more open-minded about types of foods than he used to be! They had a "living lunch" program at his old school and he also took some cooking classes. That helped some. Generally though, if he could eat burgers and fries (which we limit) everyday, he would be thrilled.

54. Veggie momocha and achar sauce with a naan bread
I've been wanting to use my steamer again, so I did. :D

For my wife, I made pasta with braised chicken and vegetables, topped with pesto. We each had different cravings tonight, and I can't eat meat, so two meals it was. Just wish I had more burners on my stove.

Bill would have preferred the chicken fried but I didn't feel like making that mess in the kitchen tonight. Once he tasted it he said, "That was really good chicken. You could do that again." Like I've never baked chicken before. :rofl:
