Thursday's dinner is.....
Leftovers! Most likely the chicken and dumplings.

BTW - The dumpling recipe I tried dinna work. I think I cooked them at too hard a boil. Good flavor....just really dense. :(

1. I like light dumplings too...
the web has suggestions tho'

- "Dumplings cooked without covering take slightly longer to cook and may require turning to cook both sides, but they are generally fluffier and have improved texture.

- Simmer, don't boil.

- The amount of flour will depend on your tastes…if you like lighter dumplings, add less flour, and for more dense dumplings, add more."

2. Thank you! I'm certain I cooked mine too "hard"
The stock was a rolling boil when I uncovered them. :( I also saw notes about letting dumpling batter stand a bit before using...it's supposed to lighten them too...didn't try that. I got great flavor, just toooo dense.

4. my aunt used to steam the dumplings on a rack over the stew
They were like clouds, and I loved them. She used bisquick, incidentally.

5. I have used Bisquick for about 12 years since Bill likes them...but I was out
My grandmother - Queen of all things Chicken And Dumpling related - used to do rolled flat dumplings.

The recipe I chose had butter...and I loved the flavor....just need to steam next time...I like the rack idea a lot. Thankie for mentioning it!

3. spanikopita and greek salad
I found some feta cheese marked down and already had a huge bag of spinach and everything else on hand.

I think tomorrow will be cook's night off.

14. the other day at a diner I had a spinach-feta omelet...
...and it was so delicious. That would have been easier than spanikopita. Heh.

at Red Robin. We've been eating the late T-day leftovers all week. Was in the mood for some feesh but not in the mood to cook. Was delicious. :)

15. I've decided that I like fish best when someone else cooks it.

25. Simple and healthy.
That's the ticket. If I had to choose one cuisine to live on forever, I think I would go for Italian. The tomato based sauces are really healthy and they use lots of veggies. Can't do cheese, though, that would be the drawback to Italian for me.

26. I'm not a big fan of tomato sauces...but I do like a fried red sauce

I cook Italian sausage with peppers and onions, then add a bit of red sauce and sort of fry it until it's really dark red and yummy. Great with fresh bread instead of pasta. I do love roasted tomatoes too...Thinly sliced on pizza is also a gooood thing!

I use Italian cheeses sparingly...just enough for the flavor bump.

19. leftovers - braised chicken thighs
mushroom pan gravy, salad, and jacques pepin's potato pancakes (where you puree the batter and add a bit of baking powder)

think I'll pull back on the onion in the pancakes next time. First time I tried this pancake recipe. I think I like shredded ones better. These fell apart in the flipping if you weren't very careful. Not too bad though all in all.

22. I used to watch Pepin all the time.
I've never tried his potato pancakes though. Actually I haven't made any of his recipes in a long time. I used to like his stuff. May be time for a new cookbook or some web surfing!

and lots of recipes out there as well. I like his butterflied chicken in cast iron recipe a lot. It's always time for recipe surfing! cheers

31. Just Bread...
That's a semi-bittersweet memory for me. After my divorce decades ago, I was just financially and emotionally barely surviving alone in a different part of the country from my family and friends.

I would take my issues out in making bread! Really good bread - whole wheat with sunflower seeds, grains, etc. REALLY yummy.

For lunch, I would go home and eat two thick slices of toasted bread with butter. Wow! Made my day all better. (I gained a bit of weight for awhile, lol.)

32. I love sunflower seeds in bread. I never add them though.
Adds it to the "to-do" list.

After my divorce, while in college, I lived on Swiss Miss cocoa for a month. Was a good month. Poor, but free and happy. And chocalicious!

I'm baking again today. Will think of you as I slather the butter on. :)
