I made Stuffed Tomatoes Provencal today. Turned out pretty tasty.
6 nice tomatoes from the farmer's market yesterday - ONLY $1 each. The bumper crop is due next week, they say, but I couldn't wait. Chop up the insides, mix in some bread crumbs (calls for fresh, but I used dry, just 1/3 less), chopped parsley, shallots, garlic, some dried basil and thyme and olive oil, stuff back into the hollowed out tomatoes and bake at 400F for 20-30 minutes.

Yum.

The entree was a hot dog (just one) with mustard and relish on a whole wheat bun, because I bought some for the 4th and AM gonna eat them all up, just with a little restraint. I could eat 3 or 4 at one sitting, but that's how I wound up 15+ lb overweight so we're not going there this time. Just one at a time.

1. Those tomatoes sound yummy!
The simplest dishes the best, aren't they? Healthy, too!

2. The ingredients sound really good
but for some reason, I just do not like fresh tomatoes hot. If they aren't room temp or cool, I have a hard time working up the desire to eat them.

5. I still don't like them cooked.
For me fresh tomatoes only taste good eaten raw. Just weird that way, I guess.

3. Those sound good! I'm chomping at the bit for a decent tomato.
