OMG! Beans
I was sorely tempted to keep this as a *secret recipe*. Passing it along here keeps it in good hands. Mouths? :D

I frequently make red beans in the crock pot. Usually spice with cilantro, salt, pepper, a bit of onion, sometimes garlic and throw in jalapenos now and then. I've had this vegetable juice in the fridge for weeks. It's similar to V8, called "Veggie Twist", a store brand.
I buy it because I know it's *good* for me. But I don't really like tomato juice or soup. So, I decided to use it for cooking. I substituted half the water for juice. OMG! The best beans ever! I will have a hard time EVER making beans again with the former method.

Y'all probably alread knew this.

1. I often use V-8 in cooking.
I like to drink it, too. Yum. My idea of a good snack is triscuits, cottage cheese, and V-8.

4. Some of the vitamins B and C might be destroyed
but big woop, you probably drink orange juice for breakfast or eat salads. You really don't need more of them.

The other vitamins and minerals are still there.

The raw foods people love to point out that vitamins are always destroyed by cooking. What they neglect to say is that they're still present in sufficient quantity in a balanced cooked food diet to keep us healthy.

Don't cry for the lost vitamins in the veggie juice. Most of them were already destroyed when the juice was bottled.

5. I use it in things like a stacked tortilla casserole
....or maybe a skillet pasta dish. It wouldn't be the only "saucy" ingredient, it might just augment the other stuff by a cup or two. I always have it in the fridge, and would rather use it up regularly than wonder if it's past its prime.

7. When I make Cincinnati Chili
I use tomato juice in place of the water. Really makes a huge difference. I love tomato juice but I do not like the V8 even a little bit.
