Ham & lentil soup for a blustery night

Ham & lentil soup for a blustery night
I pressure cooked a plain smoked ham bone slowly for an hour in half pot of water. Discarded the bones and added two cups of lentils.

I processed a large onion, some celery and a cup of carrots to very smooth consistency and added them in.

Pepper to taste and a bay leaf. Pressure cooked it for 20 more minutes. Pretty basic but the consistency is real nice and the flavor is yummy. I should have made a corn bread to go with it and will do that tomorrow.

As it was pressure cooking the wind started kicking up again here tonight. I went out to secure the cover on a large yard swing. I just got out the door and was heading for the swing when the big cover blew off and landed on a branch in the cottonwood tree. As it blew in the wind I could finally grab an end and yank it down. Hubby got several bungee cords to make a belt for it after I got the cover back on.

Last winter it was snow and more snow. This winter it's wind and more wind.

I'm getting really sick of it, too. The sound makes me want to scream!

I want potato soup - I think I may make some this weekend.

At least we got the trees pruned a year ago. Otherwise, I'd be worrying about the limbs coming down.

Potato soup sounds good, too. I got a 10 pound bag of taters the other day since they were on good sale. Maybe I'll make a small pot of potato soup. I'm in a real soupy mood these days. :D

5. Bean soup cooked with a ham hock here!
Still on the early side here, so the soup is still cooking.

I started the soup by sauteing onions, garlic, celery and finely diced mildly spicy green peppers. Next I added the fresh dry beans (a mix of varieties, soaked overnight,) water, wine, and the hock. Now it's simmering until the beans are done. At that point I'll add sliced carrots, parsley, some crushed tomato and black pepper to taste.

I'm baking a multigrain quick bread to accompany it.

I want to add something else to my soup for the next time and that sounds good. I could saute them first and then add them in. Maybe a sprinkle of smokey paprika, too.

I've never made a multigrain quick bread. Maybe you can post your recipe some day?

7. I wish that I could post the bread recipe.
The multigrain quick bread was a 5 grain mix --needing only the addition of beer and baking soda. I may try to fake it.

My peppers were from the garden and I don't know for sure which kind they were --peppers are the SO's domain. The little bit of pepper flavor was good.
