need some more cheesecake help.

need some more cheesecake help.
Ok so I am going to make cheesecake tomorrow and I have some questions. Should I put the gram crackers in the food processor to make crumbs. When I take the cheesecake out of the oven do I take the side of the spring form off and then put it in the fridge or do I put it in the fridge with the side on and after a couple of hours take it off?

1. Food processors make easy work of crumb crusts
Much better than trying to do them by hand or with a rolling pin. If you have a food processor, by all means use it for your crumbs.

When you take the cheesecake out of the oven, run a thin knife around the edge between the cheescake and the pan to free the sides somewhat (helps keep it from cracking). Let it cool an hour or two at room temperature, then put it in the fridge. Don't cover it because it's still warm and there will be condensation on the top if you cover it, so just leave it open. After it's chilled thoroughly in the refrigerator (min 4 hours), then you can run a knife around the edges again and remove the sides.

I read that when it is done cooking I should turn the oven off but leave the cake in the ove for an hour. Have you ever heard this.

3. Yes, I've seen that in some cheesecake recipes
I just never found it necessary. Plus, often when I bake cheesecake I'm baking several and don't have the time to let them sit in the oven cooling, rather I need to get the next batch in. I just take them out and let them sit on a cake rack for at least a couple hours before putting them in the refrigerator.
