Who has the best recipe for meatloaf?
Preferably something that has veggies mixed in, finely ground so the kids won't know!

1. I like sweet with savory so
I use:

ground beef, ground pork and either ground chicken or lamb
Bread crumbs
dash of milk
eggs
a dash of tarragon or maybe rosemary or both
garlic salt
one small diced onion
pineapple
broccoli

Mix really well, put in one of those nice loaf pans

cover with a spicy salsa

Bake

3. I make a turkey and spinach meatloaf.
Make it with ground turkey, eggs, and breadcrumbs, like a regular meatloaf. Add a package of thawed, chopped spinach (drained), chopped onion, garlic, basil, and salt (sorry, but I don't measure). Bake it till juices run clear. Then put a few slices of swiss cheese on top, and stick back in the over till bubbly.

5. 72 Market Street Meatloaf

I discovered this years ago in my New Basics Cookbook (Sheila Lukins and Julee Rosso).

The words "Insanely Delicious" don't even begin to cover it. Anytime I've ever heated it up in a microwave at work, people follow their noses back to my desk and want to recipe!

Meatloaf:
3/4 c Onion, minced
3/4 c Green onion, minced
1/2 c Celery, minced
1/2 c Carrot, minced
1/4 c Green pepper, minced
1/4 c Red pepper, minced
2 ts Garlic, minced
3 T Butter
1 ts Salt
1/4 ts Cayenne or red pepper
1 ts Black pepper
1/2 ts White pepper
1/2 ts Cumin, ground
1/2 ts Nutmeg, ground
1/2 c Half-N-Half
1/2 c Catsup
1 1/2 lb Ground Chuck or Round
1/2 lb Ground pork, lean
3 Eggs, beaten
3/4 c Dry bread crumbs

Saute onion, green onion, celery, carrot, green and red peppers
and garlic in butter until vegetables are soft and liquid is
evaporated. Set aside to cool. Combine salt, cayenne, black and
white pepper, cumin, and nutmeg and add to the vegetable mixture.
Stir in half-n-half, catsup, beef, pork, and bread crumbs. Mix well.
Form into a loaf and place in a roasting pan. Place roasting pan in a larger pan, and fill the outer pan with boiling water.

Bake at 350-degrees 45-50 minutes. Let stand 10
minutes before slicing. Pour off excess fat. Slice and serve.

7. Cool. Note the small change I made, in case you printed it already.
the online recipe did not include the water bath detail, so I added it. I think it's important for thoroughly cooking it.

9. that is my recipe almost exactly, but I add basil as well
i cover the loaf with bacon strips and brush with catsup for the last 10 minutes

i always make 3 at a time. one to eat right away and two to freeze to cook at a later date

10. That meatloaf sounds great, I have all ingredients
except for the pork - I have ground lamb. Ever tried it? What do ya think?

12. I don't see why not...
it'll get cooked up a bunch so it'll probably lose that gamey taste. Give it a try-- you could create a new taste sensation!

11. This is my Mom's recipe. It is the best I've made--ever!
When I filled in as the lunch cook at the Moose Lodge (years ago!) it was a BIG hit. When they found and hired the new cook the members demanded he use this recipe!

Ground beef (a pound or pound and a half)
3 or four slices of soft bread torn up small
Two eggs
About a half cup of ketchup
Dash of Worchester sauce
Onion (minced works fine, btw!)
Little bit of garlic powder or minced fresh garlic
pinch of salt & quick grind of black pepper (optional)

Mix it all up like you do bread dough and turn out into a pan to form a loaf. I usually put just about a cup of water in the bottom of the pan so you have a "Meat loaf island" then spread ketchup over the top of the loaf and cover with foil.

Bake at 350 until the meat is cooked thru. (A meat thermometer is good to use to be sure your internal temp is high enough--but that is your decision. I'm kinda paranoid about ground meats.) Plan on at least an hour for it to cook. Take the foil off for about the last 15 minutes to brown.

Now, if you wanted to add some hidden veggies, I'd suggest maybe substituting some Carrots (grated) and some grated Zuchinni for one or two of the bread slices. You may need to cook it uncovered because the veggies will add more fluid to the mix--I dunno. I think you could maybe get by with adding some chopped spinach to this too...

Meat loaf is comfort food in my book!

13. meatloaf surprise
Make your usual meatloaf recipe, but hard boil 4 or 5 eggs and peel them. Lay your loaf out and make a slit the long way and put the hard boiled eggs inside whole. Use water on your hand and seal the seam and turn it upside down so it doesn't show. Cook as usual and when you slice the meatloaf there is a slice of egg in it too. Surprise.

15. Easy Meatloaf
1 lb ground beef
1 lb ground pork
1 cup Progresso Italian flavored Bread Crumbs
2 eggs
1 medium onion finely chopped.


Mix together thouroughly and bake on a rack in oven at 350 for 45 minutes (or until no longer pink inside)


This also makes great meatballs. Just add some grated cheese and garlic. Bake your meatballs---Never fry them.

16. With veggies mixed in, try Emeril's Most Kicked-up Meatloaf Ever
This was very, very good. I made it on election night along with risotto because I thought we might need some comfort food...

Can be found on www.foodnetwork.com

I didn't find that the bacon on top was the right texture...I used thick sliced, when thin might have been better. I also might skip it next time, or chopped it before laying on top.
