What should I cook with them tonight? I was thinking some sort of hearty vegetable maindish.

1. I'd be over cruising the Vegetarian forum for one of their recipes
I think they have a long thread of recipes over there, but I'm thinking fennel should be involved

2. Too late for tonight, but..
Slice and braise the leeks. Make a white sauce, add cooked leeks. Steam broccoli. Serve broccoli topped with the leek sauce. Or, braise the leeks and toss with the steamed broccoli just before serving. There needs to be something else on the plate, maybe broiled or grilled poultry and/or a mixed grain pilaf.

Save the leek greens --clean them and throw them in the freezer. At some later date when you want to make a stock, throw them in.
