Left over pork roast.
I got about 2lbs of leftover pork in the frig, need some ideas...

1. How was it seasoned?
Open face hot pork sandwiches would work if you can put together a simple gravy or if you have a sauce that would work well with the spices used on the roast.

If the roast was only seasoned with salt and pepper, cube it and use it as the meat in a taco or burrito.

3. It just has a bit of garlic, brown sugar and S & P on it.
Just a basic glaze.. The taco idea I didn't think of!! that would be great.

4. Yeah, tacos for sure
I'd first pull it into shreds, then simmer in your favorite salsa (green is best for pork, so jalapeno/tomatillo/cilantro/onion plus spices) and the good thing is then you can freeze some of it for later. Good for tacos/burritos/enchiladas/tamales.

2. I'd get some really good barbecue sauce
Slice the pork (As thin as possible) and simmer it in barbecue sauce. Serve on good hamburger rolls.

(Stubbs brand is a really good commercial barbecue sauce btw)


You also can roll it up in tortillas, cover with enchilada sauce and top with cheddar for pork enchiladas

6. Seconded, but I'd pull it instead of slice it.
"Pulled" pork is just shredded pork (easy to do with a couple of forks). I just did this last week with some leftover pork roast, and it was excellent.

7. Depending on how many you will be feeding. Make stir fry
with part of it. Just stir fry carrots, celery, onions, broccoli, pineapple. Then stir fry chopped pork for just a couple of minutes. Make sweet & sour sauce or use a commercial brand. Serve with steamed rice.

Cut some of it and freeze it for when you don't have time/energy to cook anything.

The other ideas are very good. My dear departed mother could serve our family of 5 many, many meals with 2 lbs. of pork.

8. Twice Cooked Pork
Hoisin sauce, chiles, garlic, ginger, soy, chopped cabbage, carrots.

yum.

OR

thin slice the pork, eat cold on sandwiches with good ole Louisiana Hot sauce.

Maybe a slice of tomato.
