Green Chicken Enchiladas
Now, I know this isn't exactly an authentic recipe, but I don't know how to make the sauce from scratch, and it still turned out quite tasty. If anyone has a recipe for the green sauce, I'd love to try it!:-)


Basically the same as the recipe on the back of the green enchilada sauce can, only I cooked the chicken in water in a lasagna pan, as opposed to a skillet like the can says.

cooked, shredded chicken
garlic
red, yellow, green pepper blend with onion
Sazon con Azafran seasoning blend
hot sauce
2 cans chopped green chiles
2 cans green enchilada sauce
8 oz pkg cream cheese
flour tortillas
shredded cheddar/monterrey jack mix

Cook the chicken in a lasagna pan with water (basically poaching it), garlic, mixed peppers and onions, sazon con azafran, and hot sauce until done.

Remove chicken to a plate to cool, and then shred.

Mix together chiles, green sauce, and cream cheese (I only used 3/4 of the package, though the recipe calls for one package to one can of sauce). You may need to microwave it a bit to get the cheese to blend.

In a flour tortilla, add chicken, top with a couple tablespoons of sauce, and some cheese. Roll it up and place upside down in cake pan. I was able to fit 6 enchiladas in the pan. Pour remaining sauce over enchiladas, making sure the entire tortillas are wet. Cover with cheese and bake until hot in the center. I probably baked it at 375 for about 25 min. I covered it for most of that time so the cheese wouldn't get brown.


Turned out very yummy!:-)

1. If you're looking for the Ninfa's dreaded green sauce...
here it is:

3 medium avocados
3 medium green tomatoes
4 fresh tomatillos
3 cloves garlic
2-3 sprigs fresh cilantro
2 jalapenos
1 1/2 cups sour cream
salt, to tate

But your recipe as it stands, looks really great to me!

BTW, the green sauce we had at Ninfa's last Friday seems to have lost a lot of it's zip. Do you think? It seems to me when we first moved here 21 years ago, it was more firey. Or maybe my taste buds have acclimated.

2. I think you are right!
I loved their green sauce, but it seemed ordinary to me last week.

The green sauce I would like to make is an enchilada sauce, not a dipping sauce, but the recipe you posted loooks like it could really be used either way. I could search recipe zaar, but thought I'd see if any fellow DUers had a good recipe first.
