On $40 a Day tonite, Rachel had this fish dish
that was cooked in a coconut milk base.

It's not listed on the Food TV site.

Anyone know of fish recipes using coconut milk?

2. I've had salmon in a red curry sauce
...that involves coconut milk. I no longer have the recipe, but I'm taking a Thai cooking class, and the instructor said just about all curries work the same way:

1. Bring to a boil 1/2 can coconut milk and a small can of curry paste (it looked a little smaller than a cat-food can). I suspect if you were doing a red curry, you'd use less, because it's stronger. Maybe a couple of tablespoons. Taste the mix and if it seems weak, add more. If you want it hot, add some ground or crushed red pepper.
2. Add your meat (if you're doing meat) and the rest of the can and coconut milk. Bring back to a boil.
3. If you're using potatoes, add the potatoes. Bring back to a boil. Let it cook for about 5-10 minutes, until potatoes are soft.
4.If you're using veggies and/or fish, add them in the last few minutes of cooking.
5. Season with fish sauce (just a little) and sugar to taste. You can also add tamarind powder if you like.

Serve over Jasmine rice.

I had a beef masaman (sp?) curry with potatoes and bell peppers last night, made this way.

5. Here's a recipe I posted about a year ago
Shrimp and Scallops in green curry sauce.

1/2 pound large shrimp. cleaned and deviened.

1/2 pound sea scallops with muscle removed.

1/2 pound asparagus lightly steamed but still crunchy.

1 large sweet potato peeled, steamed and cut into 1/2" thick slices.

one 12oz can of coconut milk.

butter
white wine
green curry paste
nutmeg

saute the shrimp and scallops in butter.
remove from pan.
de glaze the pan with a little white wine.
add the coconut milk and reduce to thicken.

add the shrimp, scallops, sweet potato and asparagus.
add the green curry paste 1 teaspoon at a time to taste(it's hot)
season to taste with black pepper and nutmeg.

I like sweet potato and asparagus. This looks so tasty! And I agree, the plate also makes it looks special.
