My new way to cook squash.

My new way to cook squash.
Cut squash in half & scoop out the seeds. Add a shallow amount of water to your baking dish & then add 1 tablespoon of apple cider vinegar & 1 tablespoon of liquid sweetener, like agave or maple syrup, & mix the liquid. Peel a nice chunk of ginger, grate it & sprinkle it into the liquid. Place the squash, flesh side down in the water & bake at 350° until the squash is tender. Most of the liquid cooks off & the ginger gets crusty & brown - it's almost like ginger candy! Place the grated ginger in the squash & enjoy.

1. Nice!
Our garden is starting to produce quite a few squash (mostly buttercup/turban and summer), and I was looking for a few new ways to cook them.
