If you are on a diet or have food sensitivities
like Celiac disease, lactose intolerance, carbohydrate sensitivity, etc--I wanted you to know that I started a message board called "Adventures in Good Eating". The point of it is to be a place to provide support for those who are starting a new eating regimen for health reasons. I got the idea while talking with folks from our clinic. Many are going for weight loss, but others have found that part of their illness involves what they eat. Either way, some are a bit angry at not being able to "eat what they want", while others are confused about exactly what they can eat. I figured a board could be a place where we could support and encourage one another while at the same time exchanging recipes and figuring out problems. You are all invited to come and check it out.

1. That's an excellent idea
I've been diagnosed with Celiac for about seven years now. I've learned to live a very full life in which food enhances rather than destroys my health.

Since I work as the office manager of a clinic, I hear from folks first hand who have just been diagnosed with Celiac or other food sensitivity problems. Having folks like you around can encourage those who have been just diagnosed that there is, indeed, life after gluten, as it were.

I like the swanky lt blue/chocolate color scheme. :-) Makes me hungry. :think:

I've known I was lactose intolerant since I was a kid, but I only recently started taking the wheat sensitivity more seriously.

Man, eating the wrong foods for you sure can cause inflammation. I feel it when I eat the wrong stuff. I have several servings of bread and next thing I know I'm waking up with a puffy face and itchy, watery eyes. Not to mention the unpleasant acting up of my GI tract. :P

7. Looks cool.
There are a lot of foods that I am allergic to -- when I eat them I feel awful the next day and have to stay in bed--shellfish, tomatoes, bell peppers, spicy stuff.

And there are foods that I just don't like. And weird spices that make me burp a lot.

So I have to be careful. I've gotten to the point that I don't want to eat out, unless it was a really expensive place with fresh food. I don't get along with grease.

I have a metabolic disorder that requires me to be on a low-protein diet.

I know that a lot of people with my disorder (PKU) are very bitter about their dietary restrictions. Personally, it doesn't bother me a bit - despite having eaten a normal diet for about 30 years before finding out I should have been on a low-protein diet for life.

my daughter has Celiac, and kids are picky enough eaters as it is. We've had the best success by just finding "regular" foods that happen to be gluten-free, rather than trying to make specifically gluten-free meals. The exceptions, obviously, are her bread (she loves El Peto Gourmet Bread), pasta (gf corn past preferred over rice pasta, though Thai rice noodles are a hit), and cereal (Nature's Path has a nice line of gf kids cereals).
