Almond-Walnut-Apricot-Date bread/cake recipe that I asked my friend for after she brought a loaf to work long ago. When I make it people ask for the recipe, too. A slice is like a little meal in itself. :9
1 large loaf
•3/4 cup whole wheat flour
•3/4 cup brown sugar
•1/4 teaspoon baking powder
•1/4 teaspoon baking soda
•1/2 teaspoon salt
•2 cups pitted whole dates
•1 1/2 cups dried apricots
•3 cups whole nuts - half walnuts half almonds (I used all almonds)
•3 eggs
•1 teaspoon vanilla extract
I chopped the dates a bit on a cutting board with a big knife, but the recipe doesn't say you have to-
Dredge the fruit in flour.
Beat eggs with vanilla.
Mix all ingredients together.
Put batter in pans lined with heavily greased (buttered) brown paper.
Bake at 300 for 1 1/2 hours.
