Pistachio (or other nut) cake recipes?


My husband's birthday is this week and he loves, adores, can't get enough of nuts. Current favorite is pistachio. Anyone have any good pistachio cake recipes with complimentary frosting ideas?

Suggestions much appreciated, thank you! :hi:

1. I've never made a pistachio cake, but this one sounds GOOD!

Here is a healthy and delicious Almond-Walnut-Apricot-Date bread/cake recipe that I asked my friend for after she brought a loaf to work long ago. When I make it people ask for the recipe, too. A slice is like a little meal in itself. :9

1 large loaf

•3/4 cup whole wheat flour
•3/4 cup brown sugar
•1/4 teaspoon baking powder
•1/4 teaspoon baking soda
•1/2 teaspoon salt
•2 cups pitted whole dates
•1 1/2 cups dried apricots
•3 cups whole nuts - half walnuts half almonds (I used all almonds)
•3 eggs
•1 teaspoon vanilla extract

I chopped the dates a bit on a cutting board with a big knife, but the recipe doesn't say you have to-

Dredge the fruit in flour.
Beat eggs with vanilla.
Mix all ingredients together.
Put batter in pans lined with heavily greased (buttered) brown paper.
Bake at 300 for 1 1/2 hours.


What day is your husband's b-day? My son's is the 12th.

The Sicilian one sounds wonderful.

3. We just ate glazed carrots sprinkled with chopped pistachio nuts. Was yummy.
