Kitchen Nightmares mysteries -- Ramsay and a film crew are coming to
your restaurant for a week. What are the odds that they WON'T look in your walk-in fridge?? Seems they always do and it is always corss contaminated and/or filled with spoilage.

I know there is a common fantasy of owning a restaurant and having fun doing so but I have to wonder about a multi generation family that spent $3 million to start a new restaurant so that their daughter and son in law could "have a good life." If you have $3 mil... that is a good life, why the heck would you risk that in a restaurant. The interest on $3 mil is about $70K/year (it used to be $150k+) so you could have that as the ultimate safety net under some other career or you could just live off of the interest and some of the principal.

Owning a restaurant is a 24/7 job. You have to check in all the incoming stock, juggle employee schedules, keep employees from stealing, drinking or giving away the liquor and then you have to do some work in the kitchen, even if you are the owner -- hot, greasy and dangerous. Big sharp knives in close quarters. Hungry drunken people in your dining room. If it goes well you will have hundreds of drunken hungry people in your dining room. I'll take the $3 mil.
