Hey, Lounge! What's for dinner?
I am making a homemade pizza tonight with artichoke hearts, spinach, mushrooms, and bacon. :9

What are you having?

1. My dear VenusRising!
I am going to poach a lovely piece of salmon filet...

In a large clay pot!

Some vegetables, TBA...

And garlic toast!

Your dinner sounds wonderful!

3. It's a little cumbersome, so I don't use it much...
But it's easy to clean, and the food is terrific!

Thanks, sweetie!

4. Funny you should ask
I'm in the middle of planning... 'cept I have no eggs.

Yesterday's rice... fried with salmon, peppers, veggies, and shrooms. All the recipes I see say I need eggs. I'm trying to figure out another "binder" (if that is why eggs are even in it).

Thinking oil + tad of sugar + cornstarch lol

Time will tell.

Pizza tomorrow. My starter had a wake up call today ;)

5. That sounds yummy, too!
Is the egg for a textural thing? Unless you're making cakes or patties to fry, I would say you could skip the egg in a stir fry.

Pizza is teh noms!

19. fried rice?
don't worry about the eggs, but you need a bit of soy sauce

skip the sugar and cornstarch - unless you are making a sauce for a stirfried dish that you will serve on top of the rice.

just saute your vegs in a bit of oil to slightly underdone, then warm up whatever else you are using and toss in the rice (I'd add already cooked fish at the very end) stir in some soy sauce to taste and you are done

when using eggs I cook them first (kind of like scrambled eggs only leave ti more flat, then chop it up) and put them on a plate until the rice is hot, I don't use them as a binder, but rather another "chunky" ingredient, as I like fried rice to be kind of loose

21. Thanks Kali
Caught me just in time :D

All the veggies are chopped and I even had the "mixture" ready. It'll go in the sink.

I am a first time wok user now lol (well, in 10min or so). I even get to see what sesame oil tastes like !!

24. sesame oil is for flavor - use regular for the frying and just a little sesame
at the end (or even at the table)

save your "mixture" for next time - add some broth (or bullion) and soy sauce, maybe a bit of ginger - it will make a nice sauce for another dish

6. playing around with chipotles
they haven't really been in my repertoire, so experimenting

baking some chicken legs in a "sauce" that consists of about 4 chipotles and some adobo (that is about half small can) and a 14 oz can of chopped canned tomatoes that I ran through the blender for a couple seconds so it is still kind of chunky

will have some homemade refried beans, rice, corn tortillas

a little starchy there but we are short on veggies right now

48. When I used to buy canned chilpotles in adobo, I'd use one or two...
.
.
.
...and end up eventually throwing most of the can away.
.
.
Now, I LOVE using good chilpotle salsa in food prep (especially chicken).
.
.
Believe it or not, Fry's Private Selection is one of the cheaper AND tastier ones
(though Herdez bottled on sale is acceptable).
.
.
Lately, I've been eating a lot of garlic-and-chile-powder-infused rice in chicken
burritos with cheese and chilpotle salsa and lots of shredded cabbage.
.
.
YUM -- cheap good comfort food eats.

It's too hot here for soup, though. We hit 80 degrees here in north Texas today.

That's on the menu for the next cool day, though.

Enjoy! :)
