It is an art form in northern New Mexico. Any recipes appreciated.

1. take whatever you like to eat for breakfast
dump cheese and salsa on it and roll in a flour tortilla:evilgrin:

oddly enough I don't like them - don't like eggs in a burrito, but I'll eat most any other kind from plain beans on

2. For a late lunch, I just had one (from Pancho's) with green chile and bacon...

10. You're so lucky
You still have a Pancho's in your neighborhood. Ours shut down, and the nearest location is like 10-15 miles away.

14. Oops! Wrong Pancho's
Some of the best food I have ever eaten, however, has been from kitchens in gas stations located in little towns dotting the interstate. That's one thing that is so great about travelling.

Do you know El Taco Tote? They have them in CA, NM, and San Antonio...real south Texas Mexican food, great.

We've got an explosion of various taquerias up here in Dallas, and I'm ashamed to say I have yet to set foot in one, although I really want to check them out.

17. When I want breakfast,
I don't want anything that resembles Mexican food. Even tho I make my own burritos for dinner and love them, the concept just doesn't appeal for breakfast, no matter what's in them. :shrug:

I thought they were some of the best in Austin.
