Pasta Bake...
Whole Grain Elbow Pasta cooked in EVOO and water to just beyond Al Dante (Great Guy, I knew him from the old neighborhood)...
Put it in a big mixing bowl with a little more EVOO, Some chunks of low fat Mozzarella, a few strips of colorful Bell Peppers, salt and pepper to taste and mix it all up...
Pasta Sauce... Saute some onions, garlic and carrots in the EVOO... I get a jar of classic or basic Marinara and add some squeeze hot pepper paste, a little squeeze tomato paste and a can of diced tomato's with some fresh Basil and a little oregano, but that is up to the cook...
Once the sauce is done, Mix that in with the other stuff in the mixing bowl...
Preheat the oven to 375-400, depending on your oven...
Get a 2 quart casserole dish or baking pan, and you guessed it, grease it up with some EVOO...
Now whisk 3-4 eggs with some low fat milk and a little no fat Ricotta cheese...
Pour your Pasta concoction into the casserole dish, pour your egg mixture over top, add a layer of (turkey) pepperoni and then add some strips of low fat provolone and bake that sucker up for about 20-25 minutes...
