Flavors of pie.
What's your favorite? What's the best you ever tasted? Worst?

I tasted one that was sort of like pennies. Not so good.

125. Hell yes. Almost better than sex.
An authentic key lime pie will send chills through you as you eat it. It is an almost orgasmic experience. Authentic key lime and extremely good barbeque are the only things that send shivers through me as I eat. But at least I know how chocolate affects many women, right?

When I was a small boy and the family moved to Miami, Fla we had mango trees in the yard. We had never seen this fruit before (from NJ) and my mom went nuts baking with mangos. Pies, tarts, preserves, wine. For years I couldn't go near a mango but as an adult I crave that pie!!!

I cut the sweetness in recipes A LOT -- true for most dessert recipes. Things that are cloyingly sweet are just plain gross in my book. Friends laugh at me -- when they have things like birthday cakes I typically either take one bite and stop eating or scrape off the too-sweet icing and eat only the cake (if it's particularly good).

And I use less chocolate in chocolate recipes too.

Most chocolate recipes are bitter if you follow the directions. I cut the chocolate in half, or even use one-third the amount called for. Chocolate recipes are insane.

23. My family's recipe uses a little vinegar in the recipe--you don't taste the vinegar, but...
...it does cut the sweetness. The BEST pecan pie I've ever had.

(except me, of course :P), it's pretty delicious. I make homemade whipped cream for it and don't make that terribly sweet either. I got the recipe off of allrecipes.com -- like one of the reviewers, I added more pecans but the rest was yummy!

and I still cut the sugar just a tad. I don't use corn syrup, I use Splenda (or sugar depending on who is going to be eating it). Delicious!

the pumpkin pies one of my brother's wife made one Thanksgiving...she didn't have a lot of cooking experience, and they were her first pie attempt. They were beautiful but she'd forgotten to add the sugar.

pear (usually a cobbler). If the pie can handle pecans easily, throw them in there.

I also love pecan pie. LOVE pecan pie, heated so much the 'filling' turns gooey, with ice cream on top. Heaven.

I don't like real whipped cream, milk (chocolate or otherwise), ice cream, etc. I use milk for cereal (skim) and cooking (whole, bought only in the quantity needed). I don't like the smell, taste, or mouth feel of milk/cream, and pudding just grosses me out.

I do love me some cheese, though.

85. Cherry pie is my favorite; although my mom made a wonderful
lemon meringue and a coconut cream that was out of this world.

The best pie I ever tasted was at a little restaurant (old style) in Nebraska. It was family-owned and they used real lard in the crust. Mmmmm! Very bad for the arteries but the best I ever had!

inside of a true and total dive joint in New Orleans a year or so before Katrina, after a plate of red-beans and rice (with plenty of sausage in it as well). It sold me on that type forever.

''THE first time I tasted buttermilk, I wasn't so impressed,'' Robert Stehling said on a recent morning, as he removed from the oven a homemade pie shell he'd baked for 10 minutes, weighted with pinto beans.

Anyone with a passing familiarity with Mr. Stehling's cooking at the Hominy Grill here -- where the thick, cultured milk finds its way into biscuits, tangy salad dressings, a marinade for fried chicken and a heavenly pie -- will be forgiven for raising an eyebrow at this point.


''But the second time, the buttermilk was poured over hot cornbread, in a glass,'' Mr. Stehling continued. ''The way the whole thing was transformed really did impress me, and it totally changed the way I thought about buttermilk.''

Tart buttermilk pie, a classic farmstead recipe that lives on in countless dusty card files but few homes, is something of a Southern sleeper: in the right hands, it can bring down the house.

In Mr. Stehling's case, his deft touch with the lemon juice and nutmeg that season the pie, and its almost chiffon-light body, have made buttermilk pie one of the restaurant's most popular dishes.

In his home kitchen, he separated a couple of eggs into two bowls. To a third, he added six soft hunks of butter and, with the circular jabs of a wooden spoon, whipped it into a thick, creamy mass.

He added organic sugar and continued stirring until the mixture had lightened in color and appeared fluffy.

''I don't own a food processor,'' Mr. Stehling said as he added the egg yolks. ''All those famous guys -- Carême, Escoffier -- they never needed one.''

The mixture rapidly took on a goldenrod hue.

''You've got to get your flour in here before you add the liquid ingredients,'' he said, scattering about three level tablespoons into the mixture and working it in with his spoon. He then squeezed half a lemon (its top facing up so that no seeds escaped) over the bowl and added salt and freshly grated nutmeg.

''The nutmeg in this recipe really balances out the sharpness from the buttermilk and lemon,'' he said.

He poured about a cup of whole buttermilk in a thin stream into the mixture, stirring all the while, until the liquid appeared thick and milky-yellow.

He then turned his attention to the egg whites.

''You're looking to get lightness out of these, but not a real rise like a soufflé,'' he said, whipping the whites with a whisk, slowly at first, then faster, until they were foamy and drooped from the whisk in soft peaks.

He poured about a quarter cup of the buttermilk mixture into the bowl of egg whites, and folded it in patiently with his spoon. He then transferred the contents of the egg-white mixing bowl into the buttermilk batter, folding in the whites until the filling was uniformly blended.

Mr. Stehling retrieved the pretty crimped-edge pie shell. ''I pour as much filling into the shell as I possibly can without it spilling over,'' he said. ''The pie shell is still hot, so the custard's already starting to fluff around the edges. See?''

Fifty minutes after putting the pie in the oven, he peeked at it. The surface was a rich bread-brown (the degree of browning is the cook's choice), and the filling had puffed up slightly.

Mr. Stehling laid three chopsticks about three inches apart on his marble counter for a makeshift cooling rack.

''I think it's important to get air under there,'' he said. ''Otherwise, the crust will get pasty on the bottom.''

''And I'm real careful to not move it too much, to let it sit,'' he said, ''because if you try to move it while it's hot, it gets fissures and starts to pull away from the crust.''

After the pie cooled, Mr. Stehling lifted a large slice from the pan. It revealed its trademark layers, with an inch of a glossy light-yellow custard on the bottom and a frothy, lighter, cake-y layer above.

''I never did figure out why it stratifies like that,'' he said. ''For a while I was obsessed with getting rid of it, but I think if I did, my customers would complain.''

''Cooking should have some mysteries to it,'' he said. Referring to the author of ''On Food and Cooking: The Science and Lore of the Kitchen,'' he added: ''Harold McGee can make it all science, but the fun in cooking is as much a result of things that go wrong as the things that go right.''

Buttermilk Pie
Adapted from Robert Stehling
Time: About 1 hour

6 tablespoons unsalted butter, at room temperature
1 cup sugar
2 large eggs, separated
3 tablespoons all-purpose flour
1 tablespoon lemon juice, more to taste
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon salt
1 cup buttermilk, at room temperature
1 8-inch deep-dish pie crust, blind-baked until very lightly browned.
1. Heat oven to 350 degrees. In an electric mixer fitted with a whisk attachment, combine butter and sugar until well blended. Add egg yolks and mix well. Add flour, lemon juice, nutmeg and salt. Add buttermilk in a thin stream until blended. Set aside.

2. In another bowl, whisk egg whites until they form soft peaks. Pour about 1/4 cup buttermilk mixture into egg whites and fold gently by hand to combine. Pour egg white mixture into buttermilk mixture and fold gently until just combined. Mixture will be somewhat lumpy.

3. Pour filling into baked pie shell. Bake in middle of oven until filling is lightly browned and barely moves when pie is jiggled, 45 to 50 minutes. If you have added more than one tablespoon of lemon juice, it may take longer for pie to brown, so bake 5 to 10 minutes longer, if desired. If edge of crust browns too quickly, cover with foil. Cool on a rack and serve warm or at room temperature. Refrigerate leftovers.

Yield: 6 to 8 servings.
