they sound wonderful. My mom used to make a chocolate cake that had a tunnel of coconut but it was from a box and even so I always liked it.

but keep in mind, the measure are European, that means I only have the gramm and not the cups.

275 g flour(405)
2 tsp baking powder
½ tsp baking soda
4 Tblsp cocoa
1 Egg
130 g brown sugar
80 g butter (melted)
300 ml buttermilk
100 g cream cheese
150 g grated coconut
2 Tblsp powdered sugar
1 package vanilla sugar
50 g grated chocolate
200 g chocolate icing

For the muffin dough
Mix the flour with the baking powder, baking soda and cocoa. In a second bowl mix the egg, brown sugar, butter and buttermilk. Pour slowly in the flourmix and mix good.

For the filling
Mix cream cheese, powdered sugar, 100g of the grated coconut and the vanilla sugar (I mixed it with the hand)

Pre-heat the oven 360F.
Fill the muffinpan with half of the dough. Roll the filling into 12 globes and press them slightly into the dough. Put the rest of the dough above it so that the filling is completely covered.
Bake for 25 minutes. Let the muffins cool off

Mix the left-over coconut with the grated chocolate. Press the top of the muffins first in the icing, then in the coconut-chocolate mix.

changed Natron into baking soda in my recipe.

I hope you can bake it soon and you like them. Mine came out really juicy. I hope you find a way to convert the gramm into cups as well. I just know that a cup flour weights different from a cup sugar. That is why I left the gramm.
