Ricotta cheese
Is it supposed to taste mealy? If so, why would anyone eat it?

The texture may be mealy, but the flavor should be of milk and grass.

5. Because it's not technically cheese.
The texture is like a grainy, thick sour cream.

Don't you people watch the Godfather??? I believe replacing genuine delicious, smooth, mildly textured ricotta with Cottage-bloody-cheese (like the school cafeteria lady in Nebraska always does!) was why Mussolini was executed & hung upside down like an old sausage!

Sorry, I had a Devo moment there.

Anyhow, Ricotta is a big part of several Italian foods that I adore. It is also something that you can put in a food processor or blender with a bit of cream and some flavoring (like Triple Sec and some powdered sugar) and whip it into a delectable smooth froth.

It is also good whipped with chocolate with some espresso powder dusted on top...
