Alton does omelets.
Julia Childs taught me to make omelets.
Not in person, on her cooking show.
"2 eggs, no more than 3 ingredients."
And get a 'proper' omelet pan.
NOT the tacky 'flody' kind.
Sloped sides.
And learn to flip.

2. I watched that episode of Alton!
It was interesting. Personally, though, I prefer my omelets a lot more cooked in the middle than he was doing.

5. I didn't like the spatula fold either.
With a little practice you can make the first fold by flipping the pan. The second fold comes when you plate the omelet by turning the pan upside down.
Looks way more cool than the spatula method.

7. After it's folded, the eggs will keep cooking for a little while
but I hear ya... I don't like runny eggs.

3. My partner found something on-line
...and we tried it this morning. Actually really easy, and it worked well.

Omelet-In-A-Bag!

Basically, it's a technique for making an omelet through boil-in-a-bag. Crack two eggs into a Ziploc, crush them up by hand, add your fillings, seal the bag, and boil it for 13 minutes. Voila. Omelet.

Also heard it works in the micro.
