17. Here ya go!
2 T. vegetable oil
1 large onion, chopped
3 cloves garlic, finely chopped
1 lb. black beans
1 c. chopped smoked ham
3 c. beef broth
3 c. water
1/4 c. dark rum
2 t. cumin
2 t. oregano
1 medium green pepper, chopped
1 lg. tomato, chopped


Heat oil in large stew pot over medium heat. Cook onion, garlic and green pepper until onion is tender.
Stir in remaining ingredients. Heat to boiling then reduce heat to low. Cover and simmer about 2 hours or until beans are tender.

Optional: Serve with chopped hard-cooked eggs and onions lightly spooned on top.

19. I think it's the rum that's added to the soup.
A little rum added to the cook doesn't hurt either! :)

15. Yeah, I was reading in cooks illustrated that they used it to keep the beans from turning greyish...
when they made their soup. Give me a few minutes to find the article and I'll let you know how much so that you don't put too much in.
