Veal demi-glace with Sriracha and cilantro in the wok with shrimp?
Fresh Carolina shrimp-ees, oyster mushrooms, woodear mushrooms, fresh snow peas, sesame oil, soy, ginger, lemon grass, rice vinegar, Sriracha chili sauce, Nouc Mam, cilantro, and veal demi! Cooked on 35,000 BTU gas wok burner and served over kasmati rice with a very cold San Miguel. It should be illegal.

3. Naw, pre-cooked. Actually frozen.
Anthony Bourdain taught me that trick. Meanwhile, I wait. Pass that popcorn, Trof!

7. I used to catch hell at Rick Thornton's boarding house in Auburn in the '60s.
Every time I'd say, "Please pass the buttah," all the B'ham boys would hoot (I'm a Mobile native). What, Puss? (They called me Puss because I was afraid of nothing .. back then). Please say it again for us, Puss!. OLEO! PASS THE GODDAMN OLEO YOU ASSHOLES!

13. Like my old Pappy, I do love my shrimp.
When I told him what I was having tonight, he rummaged around in his reefer and found some frozen shrimp I brought him from Bon Secour (Alabama) in July. Fresh of the boat, those Bon Secour shrimp were the saltiest, best shrimp I have had in ages.

8. What's kasmati rice?
That sounds SO good. I wish I hadn't promised my son macaroni and cheese tomorrow because Thai sounds so much better.

9. They were out of Basmati.
Kasmati is an Indian-style Basmati, according to the label. I can't tell the difference.

12. Two hours ago, dude!
But the left-overs will be dyn-o-mite 2-morrow. In fact, I'll probably use the left-over shrimp and sauce in omelets tomorrow morning. I have some left-over cheese grits that will make great fried patties to go with the shrimp omelets.

17. That was the mountain house in NC.
Sold it in March. My neighbor's $500K house was torched in February. I was visited by agents, but we now think they were ATF. MAX NIX. We are out of there with a good profit.

I'm now looking for a closer NC mountain house. With a gate.

11. Cool.
I haven't heard of it but there are a lot of interesting new rices out there. Not so much in Maine, though.
