Holiday baking favorites
Apple squares

2 c flour
2 t baking powder
1/2 t salt
1/2 t cinnamon
1/2 c margarine
1 c brown sugar
1 c sugar
2 eggs
2 t vanilla
1 c nuts
1 c chopped/(almost shredded) peeled apples

sift dry iingredients...mix others together except apples.. add apples last..stir together

bake in 9/12 pan at 350 for ?? til sides shrink from pan

Top while hot with:

1/2 c sugar
1/2 t cinnamon

cut into 2x2 squares..

Pumpkin Bread

4 eggs
2/3 c water
2 c pumpkin
3 c sugar
1 c oil

Beat til smooth..then add:

3 1/2 c flour
1/2 t baking powder
2 t soda
1 t ground cloves
1`t ground nutmeg
1 t allspice
1 t cinnamon

add to pumpkin mixture

then add:

1 cup golden raisins(or currants or regular raisins
1 cup chopped walnuts

bake at 350...45-50 minutes ..adjust baking time to pan sizes.. (I usually use the little loaf pans so I bake them for less time..

grease & flour pans

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

Puffs

1 c boiling water
1/2 c shortening
2 c sugar
1/2 cocoa
3 c flour
1 t salt
1 t baking powder
1 t soda
2 eggs
1 c buttermilk
1 t vanilla

combine...boiling water, shortening, sugar, cocoa...mix

then add:

buttermilk..

then add:

dry ingredients..

fill cupcake pans & bake at 350 .. I do not use cupcake liners..they puff up better without them... grease & flour pans

These do not even need icing.. ..(you can also insert a marshmallow into the batter before cooking for a glaze... good but messy..

zucchini bread

3 eggs
2 c sugar
3 tsp vanilla
2 c shredded zucchini..(squeeze excess moisture)
1 c choped nuts
1/4 veg oil
3 c flour
1 tsp salt
1/4 baking powder
1 t soda
3 tsp cinnamon
3/4 nutmeg

combine wet ingredients... mix in dry ingredients..

bake in small loaf pans at 325 for 45-55 minutes

sugar cookies

3 1/2 c flour
2 1/2 t. baking powder
1/2 t salt
1 c margarine/butter
1 1/2 c sugar
2 eggs
3 tsp vanilla

Sift dry...add to wet ingredients.. Form into mound..wrap in saran & chill for a while.. Roll thin and cut .. bake at 350 till they are as brown as you want them.. sprinlke with cinn & sugar before baking

Peanut butter cookies

1/4 cup orange juice
1/2 shortening
1/2 cup peanut butter
1/2 brown sugar
1/2 cup sugar
1 egg
mix together, then add:

sifted..
2 c flour
3/4 t baking powder
1/4 t salt
1/2 t baking powder


wrap in saran & chill til firm.. grease cookie sheet and press walnut sized pieces of dough..(I use the bottom of a glass, pressed into sugar before flattening cookies)

bake at 350.. Do not over bake.. You will want to watch them and take them out after 12 minutes or so.. (sneak one out and test it..) If you overbake these, they will be hard and crumbly..:(

BIG cheesecake

crust..

1 c graham crackers( crumbled) roll inside large ziploc
1T sugar
2T butter
1/2 t cinnamon
beat together:
2 pkg cream cheese (2 Cups)
4 eggs
1 1/2 c sugar
1 c sour cream
1 c cream
10 drops lemon juice
1 1/2 t vanilla

line springform pan with butter and press crust mixture onto bottom & sides.. pour mixture in and bake 1 hr & 15 minutes (350).. open oven door, but leave cheesecake in for 3 hrs to cool down.(this minimizes the cracks on the top..

Top with fruit ..
