Okay, DU kitchen masters: Favorite references for holiday cookies?
Edited on Mon Dec-12-05 04:03 AM by BlueIris
I want to make some goooood cookies, and using my mother's ancient copies of "Laurel's Kitchen" and a 1930 copy of "The Joy of Cooking" isn't helping a kitchen-challenged individual like me. What I'm looking for are recipies for tasty cookies, more chewy and brownie-like than hard, thin, ginger-snap-like. Money is no object when it comes to ingredients and I can (and prefer) to make things from scratch as long as the recipie is relatively simple. Advice?

3. Does anyone have any advice for keeping the cookies more moist?
Is it possible to do that?

2. Coconut Raspberry Squares!
I recipe of cookie base, such as for lemon squares (1 stick butter, 1 cup flour, 1/4 powdered sugar for 9x9 pan), baked

Enough seedless red raspberry jam to cover the cookie base

Shredded, sweetened coconut over the jam

2 or 3 egg whites and sugar beaten till they form stiff peaks spread on top and baked until the peaks are golden brown.

Delicious!
