11. Are you roasting it on a rack?
I find them to be utterly essential for duck - otherwise the thing is steeped in grease.

Secondly, do you keep the duck-fat for cooking purposes? It makes the most gorgeous roast-potatoes. :D

14. No. I have a large electric rotisserie in my kitchen.
I agree with you about a roasting rack being absolutely necessary when using the oven to prepare a Duck.

I use sesame oil to roast my vegetables.

about something else at the time? :shrug: Like hearing the Orchestra tomorrow night. Ya never know it just might be wonderful.

Will the concert environment be smoke free?

When I saw the Miami String Quartet a few weeks ago, it was in a quaint old library. Very nice. They were also showing memorabilia from Bob Dylan's life. So the experience became a treat in more ways than one.

Two piano concertos...

A wonderful program that will carry us into the Christmas program in two weeks...

Severance Hall is one of the finest venues for orchestral music in all the world... It is wonderful, comfortable and fun to go...

Yes, it is a non smoking environment...

Mrs R has one of those Showtime units (possibly the only infomercial product that is actually as good as the commercials make it sound), and a duck cooked in it is utter Nirvana.

If not, what's your Duck Secret? Every cook who is good enough to make a non-greasy duck has a Secret Method.

27. Yes, Redstone. I do have a duck cooking secret I'll share ...
I stab the duck repeatedly as it's cooking.

I used a large George Foreman Rotisserie Oven.

The duck was roasted at 400 degrees for 20 minutes per pound. Then I turned the heat up to 450 for the last 1/2 hour to brown the skin. I also stuffed a whole pealed Cortland Apple inside for flavor and added moisture.

We had a nice quiet day; just us and the boys...I've been working far too much lately and needed a day off.

Your duck formula sounds like a good one...roast the hell out of it in a very hot environment, and get that fat to drain off through repeated stabbings. I bet you had some nice crispy skin to crunch on (and damn the Cholesterol Nazis).

34. Just the two second-generation Redstones.
The older guy is 21 and lives in an apartment near his college, so he came home for the week because it's prety dead around campus and nearby areas during school holidays. Brought his roommate's damn cat with him, which hasn't been the problem I though it would be (the Little Guy has allergies, and I don't much like cats).

The Little Guy is 9, and of course lives here. As does his chicken.

I'm glad we don't have any daughers; if they inherited Mrs R's looks, I'd have to be on the front steps with a shotgun after they turned 13 or so--or pack them off to the nunnery, one or the other.
