So I'm on Creamette Pasta Company 's Sh!t List...

The back-story: I lost my recipe for lasagna, so I went to their site in search of a good alternate one. What I found......was shocking. Their basic lasagna recipe called for FIVE CUPS of ricotta cheese! It's not a large batch, and I felt that five cups was an insane amount. I thought it must be a typo, so feeling amused, I e-mailed them....

Being the jovial gal I am, I pointed out the odd directions, and I jokingly asked if they were being covertly funded by the ricotta cheese industry.

THEY GOT MAD AT ME!!!:rofl:

I got a STINGING e-mail in which they sent me a RIDICULOUSLY long list of "other lasagna recipes that might be acceptable" to me.

Holy shit! Some people have no sense of humor. I e-mailed them back, clarifying that I had been "joking around with them," and I
never. heard. back.

19. Just be advised that Barilla's advertising is misleading.
They go on and on about being "italy's favorite pasta," but the Barilla pasta you buy here is not made in Italy.

Go with DiCecco if you want the real Italian stuff.

7. One summer many years ago,
my mom opened a package of Creamettes pasta shells (for the dreaded summer Tuna Salad). It was full of bugs. Mom was mad enough that she sat down and wrote a letter, detailing how she was so looking forward to sharing that Creamettes dining experience with her family, only to be disgusted with a box full of pasta and bugs.

We thought that was funny enough, but the company actually sent her a full case of pasta, in many varieties, along with a heartfelt letter of apology.

I see things have changed over there. :)

15. Actually, I was kind of glad...
I hated tuna salad, and had a good excuse for that summer for not having to eat any of it. (I love tuna salad, but I HATE peas!)

Wonder if that phone call was monitored for quality assurance?

If not, do a google search. You could have some SERIOUS fun with this woman.

One of the funniest times I spent with reprehensor was an antiquing weekend in East Texas, where our B & B had a copy of "Letters From a Nut" and the sequel in their bookshelf.

In the evening, we sat and read the letters to each other until we had tears running down our faces. He's THAT funny.

16. Technically Ricotta isn't cheese
Usually cheese refers to products made from curd created due to coagulated casein.

Ricotta uses another, high-temperature coagulation. Its curd doesn't contain casein at all, as the casein is already part of some other cheese made before the ricotta.

When I make lasagna, I mix parm cheese, salt, pepper, garlic and an egg into the ricotta. I don't use 5 cups, tho...just two but it really could use a little more. I'm just too cheap to buy another carton. I wish they would start packaging things in the portions you need them in!
