Of course it helps when you live in a neighborhood that has a lot of very good, affordable restaurants and a kickass deli at the co-op.

I imagine Opihi has some 'ono smoked fish or wild meat or something he'd like to bring, too...

Note that pineapple grwon elsewhere is generally stringy and flavorless. For some reason it just has to be grown in the red dirt.

Edit: That'd be smoked fish. We're not "soaked" until about 4 on DUau day :-)

Seriously:

Hamburger, rotel tomatoes, enchilada sauce, black beans, some sort of mexican seasoning, spanish (or whatever) rice, cream of chicken and cream of mushroom soups.

Served over chips w/ cheese or as a casserole layered with soft tortillas.

And sorry to leave you hanging. I saw your post just as I was leaving for work and when I got home I had some unexpected family drama to deal with.

I'll just post it here because it's no secret or anything. (My gramma's shortbread recipe though, I go to my grave with) ;)

Ingredients:

1 lb cottage cheese
1 zucchini
2 (7 oz) cans chopped button mushrooms
1 (14 oz) can whole leaf spinach drained
½ cup grated Parmesan cheese
¼ cup dried parsley flakes
1½ Tbl garlic powder
1½ cups minced onion
1 Tbl minced garlic
2 (10 oz) jars marinara sauce
1 (8 oz) package oven ready (no boil) lasagna noodles
½ cup pepper-jack cheese

Directions:

1. In large bowl, mix first 9 ingredients together and set aside.

2. Layer bottom of 12 x 9-inch pan with 1 cup marinara sauce. Place 3 uncooked lasagna noodles on top of sauce. Top with layer of 1/3 cheese mixture. Layer another 3 noodles on top of mixture. Pour 2 cups marinara sauce over noodles (this allows noodles not to burn while cooking). Layer another 1/3 of cheese mixture on sauce-covered noodles. Repeat. Layer 3 remaining noodles on top of cheese mixture. Top with 1 cup marinara sauce and pepper-jack cheese. Cover baking dish with foil. Bake at 375 degrees for 70 minutes.

By the way, I would have to have my jaw wired before going to a DU pot luck. Too much good food. Too little stomach space. :)

79. I make this spread called Chesapeake Clam and Cheese
It is a mixture of claims, minced green peppers, onions, parsley and bread crumbs, covered with mazzarella cheese, bacon, green olives. You spread it on Triscuits. It has to be HOT.

85. Vegetarian Mexican of some sort.
with cheese on the side for the vegan crowd....and NO LARD. That's my peeve, the Mexican places near me keep using lard ingredients in the *labelled* veggie food.

Norwegian meatballs
much more tasty than regular cocktail meatballs, or swedish meatballs (at least per the recipe passed down in my family) - have to prepare them more than a day in advance so that the onions, gravy, and other goodies blend the flavors to become fully savory.

Have to admit that my mother was never much of a cook - except for a couple of family dishes passed down by the generations, and nothing is like the norwegian meatballs.
