4. I've been wary lately...
of just what all chicken or cattle have been filtering with their livers lately, given modern techniques and speed-growing.

22. I do chicken hearts and gizzards
saute with lots of onions, some salt & pepper, cover with beer and lots of paprika. Cook for 30-45 minutes. Thicken the sauce as you prefer, add sour cream and serve over egg noodles, or spaetzle if you can get it or make it. mmmmm
It's a family thing, never for uninitiated guests.

18. yes....but you have to do the Basque thing!
We have slabs of steak that are too big for plates..beef all local and eating great alfalfa..and the LAMB... ALL HOME GROWN...never can eat lamb anywhere else.

We have national Basque festival here..still have sheep herders in boarding houses....just like a hundred years ago.

Live in remote area...but the food compensates.

been to Mexico many times...the beef is terrible...stringy .. the poor things are so skinny.

17. basil leaves, potatoes and carrot roots
Sing a fugue in my spice garden,
that all the various roots, tubers and leaves
come together and sing a song of healing and joy,
and as they decay and return to the earth's decay
everyone ate them and has a full belly. :-)
