Gimme yer favorite salad recipes!
Please?

Preferably low-fat, and no pasta salads, either. I have been forbidden to bring pastas, rice and bread/bread-like substitutes (like tortillas and chips) into the house for the rest of the summer. I can eat breads and pastas all day long and not gain weight, but my spouse cannot. So I am going to do my very best to be supportive, and whip up some yummy salads. He's a very good and creative cook, but we share food-making duties so I need a few ideas of my own that don't revolve around pasta and sauces.

Anyone have any relatively quick favorites? Can include chicken and tuna or shrimp, but neither one of us eats pork or beef...

I hate to sound picky. Just asking for ideas. I, personally, LOOOVE Mediterranean-style chopped salads (parsley, cucumbers, olives, etc.) so if anyone has any of those kinds of recipes, I'd be thrilled.

1. This is soooooooooo Yummy
If you substitute plain yogurt for the mayo it's low
fat .

It's a Wonderful Waldorf
2 Ginger Gold apples (Fuji will substitute)
1 Red Delicious apple
3 tablespoons cider vinegar
1 cup prepared mayonnaise
1 pinch kosher salt
Cracked black pepper
3/4 cup toasted walnuts, crushed
1 cup golden raisins
2 teaspoons curry powder
2 stalks celery, thin bias cut
1/3 cup fresh mint, chiffonade
1/2 red onion, julienned
1 head romaine lettuce, heart only

Cut apples in half and remove the core with a melon baller. Chop apples into medium-sized pieces, leaving skin on.
In a bowl, toss apples with the cider vinegar. Fold in mayonnaise thoroughly. Season with salt and pepper to taste. Fold in walnuts, raisins, curry powder, celery, mint and red onion. Adjust seasoning. Refrigerate for at least 1 hour to allow flavors to incorporate. To serve, arrange 2 leaves of romaine lettuce per plate and spoon salad on top.

6. orange walnut salad
2 Cans mandarin oranges reserve 1/4 cup juice
1 Tb Honey
1/2 t cinnamon
1 lb spring greens
1/2 red onion thinly sliced
1 cup radishes sliced
1 cup toasted walnut halves
1 Tb olive oil

Combine cinamon, olive oil, honey and orange juice to make dressing. Toss and serve.

2. I recently had a somewhat exotic salad-
it had chicken, almonds, and lots of pineapple over spaghetti in a light wine/oil sauce, served in half a pineapple. It was semi-chilled and very good! I'm sure you could substitute some greens for the pasta. Great on a hot summer day!

3. Broccoli Salad
Here's one that is popular with my family and friends. It makes 8 or more servings. You can leave out the "bacon bits" and use lowfat mayo.

Broccoli Salad

1 Bunch broccoli
1/2 lb. crisp Bacon (I use about 1/2 jar real Bacon Bits)
1/2 cup white raisins (called “golden raisins”)
1/2 cup chopped onions
1/2 cup chopped celery

Dressing:
1 cup mayonnaise
1 tsp. Vinegar
2 tbsp. sugar

Mix dressing and add to salad ingredients the night before serving. Refrigerate overnight.
Before serving, add: 1/2 cup sunflower seeds
1 small pkg. Slivered almonds
1/2 cup salted peanut halves

The only thing different is the main ingredients I use..

I use broccoli, cauliflower, and bacon the dressing is the same and I omit the nuts.

I can eat a whole bowl of this stuff its THAT good! I must try your variation sounds equally as good!

Edit: forgot to add I put shredded cheddar in as well.

4. Two
Perennial favorite black bean salad:

2 cans whole black beans (rinsed)
2 cans corn (shoepeg, niblet, whatever, just not creamed)
1 red pepper, seeded and chopped (orange or yellow also work well)
1 bunch cilantro, chopped
couple of squirts of lemon juice
couple of Tbsps of balsamic vinegar
good pinch of kosher salt

Mix, serve chilled.
Very low fat, very good. Adjust to meet your tastes.




My favorite spinach salad:

Baby spinach
Red seedless grapes, halved
Walnuts, unsalted
Smoked tofu, cubed (about 1/2" cubes--we use Soy Deli Hickory style. Do not use plain tofu!)
Top with raspberry vinaigrette

Pretty low-fat.

5. This is my very fave
Baby spinach leaves
bartlett pear slices
walnut halves
gorgonzola cheese (I myself leave the chesse out. Too stinky for my tastes)

cranberry citrus vinaigrette (I don't have a recipe for this)

Anyway this is a lovely salad. :)

And now I am craving one! *lol*

9. Avocados...
I love to dice up avocados, mix 'em with a bit of shoyu (soy sauce), even a tad wasabi or Japanese pepper, or even cayenne would work, or horseradich, then serve it in a half of an orange bell pepper (or yellow works, but orange really is the best).

That's it. And it is SOOOOOO good!

I have some great recipes for macaroni salad, but since you can't eat them, I'll keep them to myself. ;)

11. Kitchen sink salad
As in everything but...
with whatever you have on hand.

Mixture of greens including parsley, basil, dill, whatever
whatever fresh veggies are around
fresh tomatoes in the summer, there are miniature sweet peppers available these days
carrots, celery, green onions, beets... the sky's the limit.
cheese
nuts
fruit, fresh or dried
Add chicken or shrimp as you wish.

Usually a simple oil and vinegar dressing. Splurge on the oil and get reeealy good stuff, it makes a difference. Also good, barrel aged balsamic vinegar.

Vary the ingredients based on what's fresh in the markets or garden. Go for sweet one time, garlic the next. Add spices, preferrably fresh.

14. Hm...
One can black beans, drained/rinsed
Three ears corn, cut off the cob, tossed with a little oil or cooking spray, roasted (425/10-12 minutes). You can use frozen but roast it anyway to wake it up.
A handful of cilantro, chopped
1/2 jalepeno (or more/less, to taste), minced
One mango, chopped into bean-sized pieces
Juice of one lime
S&P

Toss, chill, eat.

15. For Salad Dressing:
mix up 1/4 cup balsamic vinegar for every cup extra virgin olive oil for a tasty and healthy treat.

What you do about the rest of the salad is your own business.
