7. If a newbie comes to the bar and does that in front of a real sushi chef,
then yes. I'm pretty close to the master chef at the bar I go to and I know his sushi. Some of it I wouldn't think of overloading wasabi -- or even using any. But if I'm having rolls, he knows my fondness for wasabi and doesn't flinch. He picks my sake for me and I'd know if he had a problem with me :)

If I'm not at the bar (which for me means I don't know the chef) I have no qualms loading up on the wasabi.

Don't be fooled. The green smooth textured clump on the side of your sushi dish is rarely real wasabi. More commonly it is ordinary horseradish with food coloring added.

5. The way to tell if it's real reconstituted wasabi powder of the fake stuff
is the color. If it's bright green it's fake. If it's dull/greyish green it's real.

The real stuff is great (and fresh is rare but better) but the fake is yummy, too.
