What is a good recipe for cucumber salad?
Ok - I know there was a post on this last week....But I failed to write them down...

But I need a recipe now!

Can anyone share one? :9

1. A hint, not a recipe
In general, it's best to slice the cukes thinly, put them in a collander with salt, and let them drain liquid for an hour. Then rinse salt off and squeeze moisture out. Then, mild onion and an herbed vinagrette (sp?), makes for a good cucumber salad.

3. Try these dressings....

Thai Sweet:
2 -tablespoons of sweet rice vinegar
4 - tablespoons of light oil (like canola)
1/2 tablespoon of cold water
Pinch of salt & pepper
Pinch of red pepper flakes
Pinch of sugar, to taste

Mix well, chill, and then toss with salad when ready. Should be enough dressing for two.

Creamy Cucumber Dressing:
2- tablespoons of sour cream
2- tablespoons of mayonaise
1- tablespoon of white or apple cider vinegar
1- tablespoon of cold water
1/2 tablespoon of light oil (like canola)
Pinch of salt & pepper
Pinch of dried parsley flakes
Pinch of dried dill weed

Mix well, then chill. Toss with salad when ready. Should be enough dressing for two servings.

4. Amish cuke salad

Wash & slice 3-4 cups cukes into *thin* slices, salt lightly, drain on paper towels 10-15 minutes. Mince one small, sweet onion and dice one medium tomato. Combine. Cover with dressing made from 1/2 cup cider vinegar, 1/2 cup water and 2 tbsp. sugar. Chill 1 hour and serve.

8. Good recipes, but I like my onions thinly sliced,
instead of minced.

So that's an option, also. But I like onions, so I enjoy crunching into them and being able to eat just a slice of onion if I want.
