2. NOW WE'RE TALKING!
The first pic is of a Charolais, a Continental breed that I don't care for much but lots of cattlemen like them. They work out OK when crossed with Angus bulls, I guess, but they don't seem to like to herd up much.

Next we have what looks like a shorthorn mix, probably a brood cow.

And another shorthorn mix, showing you a wonderful cut of meat when done right...the tongue! Tongue often ends up in bologna and beef sticks, etc., in this country, since we do not have proper appreciation for it.

And then, an old timey chart showing the cuts. As you can see, it is the ass end of the cow from which all the good high priced cuts come, which is why breeders like to see those big butts on them.

Damn, I'm gonna have to grill me a steak tonight now! Mmmm!
