2. White Burgundy, but
that can be VERY pricy. If you can find it, Sauvinon de Sainte-Bris, from Moreau et fils, is terrific value for money. (I haven't found any lately and probably wouldn't reveal the secret if I had!)

Sancerre is good --

(Salmon is supposed to be a good brand but I still haven't opened the bottle I bought).

Pinot Grigio di Venezia

There are a lot of Pinot Grigios, and they vary in both price and quality -- real value for money can be found -- but I think the best ones come from the homeland of Pinot Grigio, northeastern Italy.

And the worst from California.

3. Try a pinot noir
Let's see, what can you get in Philly... maybe a Saintsbury, Steele or Domaine Carneros from California. Nice New Zealand pinot noirs include Kim Crawford and Tohu.

If you happen to find a Patz and Hall, go for it!

If you can't bear to give up red wine, and I can't, go with a lighter red for white meats. Pinot Noir is a good bet.

Check out Oregon Pinots. They're making some good ones.

10. We have been sucking on Fume' Blanc
Hogue Vinyards (Washington, Columbia Valley) 2003 has been a favorite here. One case for the price of 10 bottles works for us. Yum!

11. I like Fat Bastard wine that they sell at Whole Foods
If you can't drink it then don't use it to cook with.

With a veal dish you would treat it like beef or pork and it depends on what you are making because you can either use white or red.
