7. Being from South Carolina I can say...
with tortoises and terrapins and turtles that can't completely close their shells you just "stew" them. This is done by boiling the whole creature until they come out of the shell and them cleaning them (remove the entrails, etc) and stewing the rest with vegatables like celery, onions, peppers, etc in a onion soup mix. Haven't ever had it myself, but have heard that if it's done well they can be a fine meal. This sort of thing is why the South will never fall to chaos in the event of massive terrorist attacks, etc. We're just to damn hard to get rid of.
