DU Cooks: Favorite Potato Salad?
I'm supposed make potato salad for tomorrow. Do you have a favorite recipe?

And what are the best potatoes to use?

4. Can't help with a recipe... but
I think russets are the best, because they seem to hold their shape better after boiling.

5. How about this....
Baby new pototoes, boiled until just tender. Leave the skin on if you like.

Mix up some mayonnaise (garlic mayo if you like) and some salad cream (which may or may not exist in the US - look for Heinz), add in some finely chopped spring onions (scallions?) and then toss the potatoes in it. Lots of cracked black pepper and salt!

If you are feeling naughty you can also add some finely chopped crispy bacon too!

6. Here are a few tricks
I like to use yukon gold potatoes-

Use a little chopped onion chopped fine

Use a lot of eggs- I use almost a dozen for a big bowl

Use plain yellow mustard- forget the fancy stuff

Chopped dills minced fine work great but I also throw in a sweet pickle too (Just one little one) I also add pickle juice about 2 or 3 tablespoons

Wait until the eggs and the potatoes are cold before you add the mayo

Don't forget celery! I also add chopped radish sometimes
