Jambalaya is still good on the third day!
Okay, the reheating toughened up the crawfish a bit. But I made a damn good jambalaya on Sunday, and am finishing it up tonight.

Although...

I suppose one could make the stew, then reheat it the NEXT day, and throw the mudbugs in THEN!

That's right, you said the meat got tougher... But I suggest trying it; if it doesn't improve the flavor, then, um, you've learned that even I can be wrong, on occasion.

that has no application. However, if it will ruin my atheist celebration of the winter solstice... On the other hand, I don't like shellfish.. Wait, I tell a lie - my father's baked clams I would kill for.
