15. Crabcakes in place of English muffins is another outstanding variation on eggs benedict.
AND, when Character Assassin and I had breakfast at a place in Monterey called Rosine's a few weeks ago, he ordered their southwestern eggs benedict: grilled bonless chicken breast and grilled green chile on an english muffin, topped with poached eggs, and they'd mixed salsa with the hollandaise. Brilliant (and "why didn't I think of that" easy). I wanted to eat my breakfast AND his, it was so good.
