and Lafayette, pop. 100,000 soaking wet, is the center of another cultural universe -- Cajun culture! (Real Cajun food, by the way, is spicy but not blazing hot like wannabe chefs elsewhere make it.)

Roger that on the zydeco! There are many African Americans who identify as Cajuns; zydeco is their music. The unusual name comes from a French lyric: Les haricots sont pas sales (the snap beans are not salty). If you say "les haricots" fast, it sounds like "zydeco".
