6. I'm buying Egg Beaters (or similar) and freezing in ice cube trays...

the same can be done with eggs if you crack them open and lightly whisk before putting in ice cube trays. I don't eat many eggs and can use substitutes for baking. I feel for people whose livelihood depends on the availability and price of eggs.
