New Years' lunch

I don’t want to do another Ham. I have tried to make what my mom always made for holidays this past year and a half for my dad but I don’t wanna. Lol. If I cook mom’s menu, I hear how hers was better and if I do something different, it’s how she always stuck to tradition because “that’s the way it should be.”

I am making a family chocolate cake for New Years but that’s as far as I’ve gotten.

Any ideas? I’m a vegetarian but the only one in the family. And I don’t force them all to eat “fake meat” 🙄 on holidays and family days.

Convection oven help?

I have a convention oven that’s relatively new. I’m really struggling with it. I follow recommendations about reducing cook time and learned that I can’t cover stuff if I want it to cook properly. But, now holiday baking is here and I’m so confused. My bread pudding, started it at half the time and kept an eye on it - hard as a rock on the outside and wet in the center with the backside darker than the front. I set a timer now to rotate cornbread, etc., so both sides of the top cook evenly, but still almost always have a soggy center.

Now a favorite-cranberry orange loaf - first attempt in bread pan, terrible. Brown on the outside and literally watery and wobbly inside. I went to take it out and it wiggles like jello.

Chicken breasts, steak fries, frozen pizzas, all cook up just fine. It’s just baked goods. 🤷🏻‍♀️

Advice, before I go get another damn oven?

I made walnut "Parmesan" cheese today

Put it on some veggie pasta. It’s not cheese, but has it’s own flavor and I like it. Especially with the roasted tomatoes in my sauce.

I haven’t tackled vegan cheese yet. The disgusting mess that was my oat milk attempt is holding me back. What recipes do you guys like for different vegan cheese?

Question about an ad

I’m getting an overpowering iPhone/YouTube ad that takes over DU completely on the homepage and after a click or two internally when I type in another DU page link. Anyone else having this problem or know how to navigate around it?

Sourdough

I’ve tried two different recipes to get my sourdough going. Both were spectacular failures. 🙄 anyone have a starter recipe they’ve had luck with that they could share?

Tried making oat milk..

I wonder if it would taste better as chocolate milk? 🤨

It’s cheaper than buying it but wow making it was messy. My daughter’s guinea pig loved the pulp though. I dried it overnight and broke it up with her breakfast.

Any tips for making it more tasty?
